Two-Level Configuration (Fully Assembled)

With both stacker sections in place, you can cook on two levels.
The included water pan (filled with water or sand) acts as a heat deflector between the fire and the food, allowing you to control the temperature precisely—ideal for both hot-and-fast and low-and-slow cooking.

This setup is especially suitable for large cuts that require slow cooking, such as brisket, pulled pork, ribs, or hot-smoked salmon.

The spacious chamber is also perfect for cold smoking when paired with the ProQ Cold Smoke Generator (sold separately).

Single-Level Configuration

A practical alternative for smaller cooks.
You can still cook or smoke food slowly, just as with the full configuration, but this setup is particularly efficient for small batches.

Insert an empty water pan to use the unit as a traditional oven, imparting a subtle BBQ flavor.
Remove the water pan to grill directly over the charcoal—thanks to the added distance between flame and food, you can achieve a crispy texture without overcooking.

Kettle BBQ Mode

Remove the grates and stackers to transform the smoker into a compact kettle BBQ—easy to transport and assemble, perfect for days at the beach, park, or camping.
Use it as a classic grill for burgers, sausages, or kebabs, or offset the coals and use it as a mini smoker, achieving deep smoky flavor in a compact package.

What is a Bullet Smoker?

The ProQ® Elite Version 4.0 / 2019 series, introduced in 2018 and perfected in 2019, represents the latest generation of ProQ® products.
All three bullet smokers in the range—Ranger, Frontier, and Excel 20—underwent significant and unified upgrades.

Bullet smokers are universal charcoal cookers designed especially for barbecue smoking.
They retain heat exceptionally well, enabling long, stable cooking sessions without the need for constant attention.
At the base of the unit is a charcoal grate, and the sides feature adjustable air vents for controlling airflow and maintaining proper combustion.

To start the smoker, place lit charcoal into the base, then add a hot water-filled pan above it (for smoking), followed by the cooking chamber and the lid.
If you’d prefer to grill instead, that’s also possible—just remove the water pan, stacker section, and lid, and use only the base and charcoal grate. This turns the unit into a kettle grill.
